Carrot juice is probably consumed more than any other type of vegetable juice. Besides carrots being cheap compared with many other vegetables, even the organic variety, carrot juice is actually sweet and pleasant to the taste. Contrast that with pure broccoli juice! Before we get to the recipes, just a few notes on preparing carrots for juicing. If you are using organic carrots, then there is no need for peeling. Just clean them and top and tail them. The skin is a great source of nutrients, particularly antioxidants, and will help improve the nutritional content of the juice - from awesome to super awesome.
If the carrots are not organic, then no worries, just peel them to make sure you are not taking in too many pesticides. Your still going to get a nutritious carrot juice.
