The reason being that the outer layers of fruits and veggies concentrate in antioxidants to protect against the oxidizing effects of sunlight and oxygen in the air. Thus protecting the flesh inside. So whenever possible always juice skins or the pith of any fruit or veggie. However, skip juicing the skin of citrus fruits, most of them contain oils that can upset the stomach in higher concentrations.
